Thaise salad with shrimps

Yes, it’s finally sunny in my cold homeland and I only want to eat salads all day long. Do you also suffer from this when the sun shines?

Last week I made this fresh salad and he is far too good not to share with you. In Thailand, I often ordered a green papaya salad with shrimps, which looks a lot like this salad. Due to the different veggies, the salad is packed with vitamins and minerals, soybeans are rich in protein and coriander is good for digestion. Everything you need for a healthy body! The ginger dressing gives the salad a fresh spicy touch, delicious.

(For four people)
2 large wasps
2 cucumbers
500 grams of shrimps (deep freeze)
400 grams of soybeans (deep freeze)
Hand unsalted peanuts
Handy coriander
Slice of olive oil
Pinch of salt

2 limes
2 tablespoons tamarind pasta
Block of fresh ginger (2 by 2 cm)

Spiral cutter

Boil the soybeans as described on the package. Add some salt and rinse with cold water when cooked. Put a spoon of olive oil in a pan, add the prawns and season with salt. Bake in 5-10 minutes with the lid on the pan. Make thin crumbs of cucumbers and wasps with a spiral cutter. Put it into a salad bowl and add the soybeans and prawns.

Cut the ginger fine or squeeze it with a garlic press. Squeeze the limes into a bowl, add tamarind and ginger and stir. Pour the dressing over the salad. Garnish with chopped peanuts and fresh coriander.

Tip: Tamarine is a fruit paste available from the Asian toko. Use thin tamarine without added sugars for this recipe.
