Salmon + Avocado Spring Rolls

Spring rolls healthy recipe

These rolls could be eaten as lunch or as a starter with dinner. If you want to bring something more special than a boring sandwich to your work, you can take them in a lunchbox too. Add some extra buckwheat noodles in it to make them more filling.

Did you know the lovely combination of avocado and salmon makes the rolls really creamy? Moreover, they’re packed with healthy fats which are important for your heart health and to lower the bad cholesterol levels in your body.

(Makes 6)

6 rice paper sheets
150 grams of smoked salmon
1 avocado
1/4 cucumber
1 tablespoon of sesame seeds

Rice paper sheets are available at Asian supermarkets.

Bowl with warm water

Slice the avocado open, take the pit out and make large slices in both parts. Take the slices out with a spoon. Next, cut the smoked salmon into long strips. Afterwards, slice long thin strips of the cucumber too. Now you have all the ingredients ready.

Put some warm water on a rice paper sheet and put 1/6 of the ingredients (salmon, avocado and cucumber) on the sheet. Then roll them up and fold the sides to the back after. In this short video you can see how it works. You can make the rest of the rolls in the same way. Lastly, add some sesame seeds on top of it. Enjoy!

Ps. Do you want a spicy dip with it? Mix 4 tablespoons lime juice,  2 tablespoons fish sauce,  2 tablespoons of cane sugar (maple syrup is also fine) and one chopped birds eye chili together in a bowl. This is the traditional Vietnamese dip which is used for the spring rolls.
