Fresh Cucumber Salmon Rolls

Are you looking for a delicious starter to serve with your upcoming New Year’s Eve dinner? Don’t look further because these cucumber salmon rolls are always a winner. They’re very easy to make, which saves you a lot of stress. Just peel the cucumbers, fill them and roll them up. Easy does it. These rolls are one of my favourite starters. Not only because they taste amazing, but also because they’re full of healthy nutrients.

The combination of cucumber, smoked salmon, cottage cheese and chives is very fresh. The smoked salmon provides a dose of healthy fats, cucumber is a great source of vitamin C and cottage cheese is full of protein. This light starter is perfect if you have many more courses ahead. Bring on that big New Year’s Eve feast meal!

(Makes 6)

1 cucumber
100 grams smoked salmon
100 grams cottage cheese
2 tablespoons fresh chives

6 skewers

Grate the skin from the cucumber with a spiralizer. After, grate six thin long strips and put them on a plate. Cut the salmon in thin long strips as well. Divide the salmon over the strips of cucumber, make sure you place them in the middle. Add a teaspoon of cottage cheese on top and garnish with fresh chopped chives. Lastly fold the outsides to the middle, put a skewer in it and they’re ready to eat. Enjoy!
