Move over avocado, these egg-in-hole toasts are my new favorite! They are easy to make and fresh, wholegrain sliced toast is perfect for the job. Sunday breakkie sorted.

1 free range, medium organic egg
1 slice of wholegrain toast
1 tsp. olive oil
salt and pepper
chili flakes (optional)

Simply cut a hole in your bread. You can use a pastry cutter or I used a small coffee cup.
Add the olive oil. Now place the bread in a frying pan and leave it till it turns brown.
Flip the bread and crack an egg into the hole. Now put a lid on and leave the egg to poach.
Serve with a grind of black pepper, salt and a pinch of chili flakes.
