Vegan Mexican Speltwraps

This dish is great to make when a group of friends is coming over for dinner. I love to have little wrap parties: a big table full of different plates with homemade wraps, guacamole, toppings and fresh herbs.

Everyone can choose their own toppings and create their favourite wrap. It’s very easy to make wraps by yourself, you only need four ingredients and they taste better as the supermarket bought ones. If you use spelt flour for the wraps they’re not only very healthy but they’ll also have a delicious grain taste. Make sure you bake the wraps very thin, they’re not pancakes of course.

The guacamole makes the wraps very creamy and the combination of guac with kidney beans, corn and red onion has a Mexican twist. By adding a bit of coriander the wraps have a fresh hint as well. Don’t forget to bring over your Mexican hat when you’re having a wrap party!

(For one person – makes 4 small wraps)

75 grams spelt flour
150 ml water
Few pinches salt
1 tablespoon fresh coriander
Olive oil (to bake)

1 avocado
1 garlic clove
1 tablespoon red onion
Juice of 1/2 lime
Few pinches salt

50 grams corn
50 grams kidney beans
50 grams cucumber
6 cherry tomatoes
1 tablespoon fresh coriander

Start with making the wraps. Chop the coriander and put it in a bowl with the flour, water and salt. Don’t be shy with the salt, otherwise the wraps will taste very plain. Mix it together with a mixer. Add a dash of olive oil in a small pan and add 1/4 of the batter. Make sure the wraps get very thin so divide the dough over the small pan. Bake on low heat and make sure both sides turning light brown. Make four small wraps of the batter and put them aside when they’re ready.

Time to make the guacamole! Chop the garlic and red onion into small pieces. Put a tiny bit of red onion aside to put in the wraps later. Then cut the avocado in half, take the pit out and peel the skin off. Put the avocado in a bowl and add the lime juice and salt. Mash it with a stick blender into a creamy mass. Lastly add the chopped onion and garlic and stir it with a spoon.

Next, chop the cucumber into thin slices and halve the cherry tomatoes. Smear some guacamole on every wrap and fill each of them with corn, kidney beans, cherry tomatoes, cucumber, fresh coriander and some leftover red onion. Last but not least: enjoy!
