Traditional Dutch Apple Pie (but healthy..!)

Mmmm… Apple pie! I love it – especially the ones my mom and grandma used to make. Sadly there’s so much sugar and white flour in there, I could only ever justify them as a treat. So… I changed the recipe and added wholegrain flour, dates and oats instead! It (almost) tastes the same, I promise, and I can’t wait to share it with you guys! Make sure you leave the dough in the fridge for at least half an hour because spelt flour is harder to roll out in thin dough. And also roll it out on baking paper so it’s less sticky!

Ingredients for 1 pie:
- 330 gram wholegrain flour (you can also use spelt flour, but it will make it harder to roll out)
- 110ml coconut oil
- 4 tbsp. water 
- 6 big soft medjool dates
- 2.5 tsp. baking powder
- 0.5 tsp. salt
- 1 lemon zest 
- 2 tbsp. of oats

- 1kg firm apples; I used Braeburns, but Granny Smiths or Jonagolds are good too.
- 2 tbsp. lemon juice
- 1 tbsp. cinnamon
- 55g raisins 
- pie tin, 20-22cm round and +/- 4cm deep.

Soak the raisins and dates (separately) in hot water for at least 5 mins.

Preheat the oven to 180C.
When the dates are ready, chop them up as small as you can.
In a big bowl, add the flour, coconut oil, water, dates, baking powder, half lemon zest and the salt.

Mix with your hands and make it into a dough ball. If it's too dry add water, a tablespoon at the time.
Wrap the dough ball in foil and leave in the fridge for at least half hour. 

Meanwhile, peel the apples and cut them in little squares. 
Make sure you dry the raisins well after soaking them, and add them in a bowl with the apples, lemon juice, leftover lemon zest and cinnamon. Mix well.

Take the dough out of the fridge and keep 1/3 separate for the topping. Roll out the other 2/3 on a baking paper sheet to make it easier. If the rolling-pin is sticky cover it with flour.
Cover the pie tin with the dough (also the sides). 
Sprinkle the oats on top of the dough before adding the apple so the bottom won't be soggy.
Fill up the pie dish with your apple mixture. 
Now roll out the rest of the dough and cut them into lines to cover the pie. (if it sticks, do this on baking paper too and take them off with a knife or flat spatula)

If you have some, spread a little bit of jam on the top dough to make it shine.

Bake in the middle of the oven for about 50 mins. Keep an eye on it, as all ovens are different!
