This falafel is so tasty, you can’t get enough of it. It is super easy to make and quick. When I was in Istanbul, it was the first time I tasted falafel. Immediately it was my favorite part of the dish. So I created my own version of this healthy mixture made of chickpeas.
Why it is so easy? You only need 7 ingredients, which you probably already have in the kitchen;) Make these delicious crunchy chickpeas balls as snack or eat with veggies or fish, the easy meal is done! Don’t worry if you are Vegan, I made also a recipe without eggs! Make your own dip, to give it a fresh twist.
Serves 20 falafel balls
400 grams chickpeas
1 small chopped onion
1 small clove of garlic
2 teaspoons of coriander powder
2 teaspoons of cumin power
1 egg (for vegans: tablespoons of water or 1 small can of black beans
zest of 1 lime or zest of half a lemon
3 tablespoons of Greek yogurt
3 teaspoons of pesto
add pepper, salt and oregano
Before you start with making the falafel, make sure the oven is preheated on 200 degrees Celsius. Take out the baking tray before you turn on the oven and cover it in grease proof paper.
Put 400 grams of chickpeas in the mixer, add a small chopped onion and a glove of garlic. Also add 1 egg, the 2 teaspoons of coriander- and cumin powder. The last ingredient you need is the zest of half a lemon or 1 lime, it is also possible to put some juice from the lemon or lime. When you have all the ingredients for the falafel together in the mixer, you can mix until it is a crumbled paste. It doesn’t have to be super smooth, like hummus, it is nice to have some small pieces of onion and beans still in the falafel. That gives it a bit of a crunch. Then you can start making the balls. Take 1 tablespoon of mix, so you have the right size for the falafel balls. Put them in the oven, until they have a crunchy outside.
It is nice to have something fresh to dip, so take 3 tablespoons of Greek yogurt, 3 teaspoons of pesto and some spices like pepper, salt and oregano! You’re done and ready to enjoy!
