I have been eating this lunch often lately and the recipe is so simple that you can not even call it a recipe.
For a while I’m a fan of tempeh, especially in combination with Sambal I really like it. Delicious spicy! Many people think that tempeh can only be used for salads and Indian meals, but just cracker is a good thing. So I like to have crackers with chicken fillet and avocado, nowadays I just replace the chicken fillet by spicy tempeh.
Tempeh is made from soybeans and therefore a good source of vegetable proteins. Thus, 100 grams contain no less than 19 grams of protein. When you can use a lot of sports and some extra protein, you do not have to get it from animal products.

2 spells crackers
50 grams tempeh
1 teaspoon sambal oelek
Slice of soy sauce
Slice of olive oil
Cut the tempeh into thin rows and cut these ropes into small pieces. Put a spoon of olive oil in the pan and add the tempeh. Add the soy sauce and sambal and mix with a spatula. Bake the tempeh for about 5 minutes on medium heat. Meanwhile, you can cut the avocado through the middle, spread over the crackers and gently rub the fork with a fork. Finally divide the tempeh over the crackers and garnish with fresh coriander.
