After a career as a well-known international model, Anaïs Droeven worked in communications and the events industry. But she was prepared to burn all her bridges and plunge headlong into this adventure: Colonel.
Colonel is located in the heart of the Louise Village district and offers its guests a warm and authentic ambiance in an elegant and sophisticated setting. The restaurant is dedicated to the different regions of France and was conceived and created entirely by Anaïs and her partner Benoit Vano.
Benoit Vano, the grandson of a colonel, could not possibly have called his restaurant by any other name. He dedicated his restaurant to his grandfather, a cultured, disciplined and elegant man who had reached the rank of colonel by the end of his military career.
Colonel specialises in high-quality beef. Apart from the classic dishes on the menu, guests may also choose the piece of beef they want, the breed of beef and also the age of the beef at the butcher’s stall in the middle of the restaurant. A Josper oven that stands in the heart of the open kitchen is where the carefully selected meat is cooked to perfection thanks to the optimal cooking conditions using charcoal. “Le Fameux Colonel” dessert that is made of lemon sorbet and a shot of vodka is the flagship dessert of the restaurant.
