Almonds, cinnamon and chocolate bars!

Sometimes, bringing the same snack to work every single day gets a bit boring. Fruit is always a good idea, but sometimes you just want something special. This is the reason I make myself a stock of bars every Sunday, so I can bring them to work. When you suddenly get hungry around 4 o’clock, you have a delicious snack, full with energy, healthy fats and fiber.

Almonds are ideal for raw recipes. They’re a source of unsaturated fats, proteins, vitamins and minerals. It’s also good to get your protein from plant foods. A handful of almonds contains already seven gram proteins. I also added linseed to the bars. Linseed is rich of fiber and it gives you a feeling of fullness. And did you know that cinnamon makes your blood sugar lever more stable? This is the reason why I add cinnamon to my healthy snacks, you get less appetite for unhealthy things.

Everybody loves chocolate, thence that I added some chocolate to this recipe. Moreover, pure chocolate is very good for your health. These bars contain everything you need during a long day of work. Try it out and let me know what you think of it!

Ingredients 
(For four bars)

125 gram medjoul dates
150 gram almonds
2 tablespoons linseed
1 tablespoons  cinnamon
30 gram pure chocolate >85%

Necessities
Food processor
Silicone baking pan

Preparation
Put the dates, 125g almonds, flaxseed and cinnamon together in the food processor and blend a few minutes. When everything is finely ground, divide it about 1/3 of the silicone cake mold. Make sure you have a layer about 1.5 cm thick and push it firmly with a spatula. Put the form in the refrigerator for ten minutes, so that the mixture is a little harder.

Meanwhile, melt down the chocolate in a bain-marie. Remove the mold from the refrigerator and cut four strips from the mixture with a sharp knife. Spoon the chocolate from the pan with a spoon and drop them in a cross pattern over the bars. Chop the remaining almonds finely and garnish over. Let the strips cool fifteen minutes so the chocolate hardens. Keep them wrapped in cling film in the fridge, so they keep the tastiest!
