After traveling through the South of France with my family, we continued our road trip to the North of Spain. Totally different than the French cuisine, but a cuisine which I happen to love. For example, Spanish people eat lots and lots of seafood, small tapas and all types of beans. When I visited a nice market in Sant Feliu de Guixols I noticed how popular 'garbanzo beans' (chickpeas) are over there. Dried or already pre soaked and cooked, they were everywhere! Chickpeas are not only super healthy but also a great source of protein and very versatile. You can puree them into some delicious hummus, add them to your soup or salad or use them as a side dish. Since I already bought some fresh fish on the market I decided to use them as a side dish.

Ingredients (serves 4 persons):
- 500 grams cooked chickpeas (you can also get them out of cans)
- 100 grams washed arugula salad
- ½ red hot chili pepper chopped into small pieces
- 1 tsp minced garlic
- 1 red onion chopped into small pieces
- A drizzle of high quality extra virgin olive oil
- Salt
Sauté the onion together with the garlic and chili pepper. Add the chickpeas and bake these until they are warm. Turn off the heat and add the arugula salad together with a drizzle of delicious high quality extra virgin olive oil and a little bit of salt. Stir well and serve!
