EASY & HEALTHY - ASIAN SALAD

I love to cook and throw big dinner parties but sometimes it can be hard to prepare something for a large group. One of my recipes, which guarantees success and it's also very easy, light and healthy, is my 'Asian salad'. When we had a small get together with a group of models a few months ago I just instantly knew what to make. All models loved it and all plates were finished so why don't you try it?

Ingredients (for 2 persons):

- 1 Head of lettuce

- 1 bag of corn salad or if you like, another type of salad

- 1 mango - cut into small pieces

- 2 avocados - cut into small pieces 

- 2 spring onions - cut into very small pieces

- Handful of fresh cilantro

- 300 grams of shrimps or chicken (cut into pieces)

- Mustard - 1 tablespoon

- Sunflower oil, small cup

- Lemon

- Kikkoman soy sauce

Start with baking the shrimps or chicken (whichever you prefer) with some garlic, salt and pepper so it's not too hot to add to the salad later on. Wash the salads and place them in a nice bowl. Add the mango, avocados, spring onions and cilantro. Make a vinaigrette by adding the sunflower oil little by little to the mustard, stirring well so a thick mass occurs. Add a good splash of lemon and 2 tablespoons of soy sauce to it and voila, it's ready (always taste it, to check if it still needs something). Add the vinaigrette and lukewarm shrimps or chicken to the rest and shake well. You can always place soy sauce on the table if people like to have some more on their salad. Enjoy!
