I really feel like eating healthy after a long and extensive dinner party yesterday... but what to eat for lunch? When I look in the fridge one of the things I find is chicory. A super healthy vegetable, not so much appreciated by many people. Actually, it's delicious and according to me nicest to eat fresh, uncooked in a yummy salad. Especially in combination with walnuts, chicory tastes great but since I wanna get as much veggies, vitamins and healthy omega 3 fatties as possible I started making this lovely and healthy recipe:
- 2 heads of chicory
- 1 Avocado (high in omega 3)
- Handful of cherry tomatoes
- Handful of walnuts (also high in omega 3)
- Soy sauce
- Extra virgin olive oil
- Splash of lemon
- Salt (if desired) & pepper
It's so easy; just cut the chicory, tomatoes and avocado into small pieces and place them in a bowl. Add some crushed walnuts and cilantro and finish it with a splash of lemon, some olive oil, a little soy sauce, salt and pepper. Flavor it according to your taste, so if you like it more sour add some extra lemon or if you like it a bit saltier add some extra soy sauce. Blend everything and enjoy!
Tip: If you have other nice vegetables in your fridge like for example cucumber or carrots, don't be afraid to add them too!
