Healthy soup
For a fit and healthy body it is important to eat as much ‘pure food’ as possible. “Just stop eating shit every day”, as Jennifer Aniston once put it in Harpers Bazaar magazine.
I have a delicious recipe for you, full of pure foods like zucchini and watercress.
The fibers in fresh fruit and vegetables ensure regular bowel movements and also nourish the good bacteria in your intestines.
Watercress contains more vitamin C than oranges! Watercress is full of antioxidants and bioactive substances that stimulate the detoxifying capacity of your liver. (For more information about watercress, see article Why we it - watercress)
Serves 4:
- 2 zucchinis
- 1 bag watercress
- 1 sweet potato
- 1 liter vegetable broth
- 1/2 red pepper
Fill a medium sized pan with 1 liter vegetable broth and put it on to boil. Wash the zucchinis, the sweet potato, and the pepper. Cut the zucchinis into small pieces and the sweet potato into slices. If it's a large potato, use half.
Add the zucchinis and the sweet potato to the pan and let everything bubble together for 8 minutes.
Cut the red pepper in half (keep one half in the fridge for dipping in your home made hummus later on). Remove the seeds and cut it into pieces, add the pepper to the broth too.
Add all the watercress to the broth and stir until the watercress is soft. Now blend all the veggies together, using a hand held blender.
Leave to cool slightly before serving so that you eat the soup warm rather than hot. It just brings out the taste.
Tip: Roast pine nuts in a small frying pan over a medium heat until they start to color. Sprinkle over each bowl of soup you’re serving.
