When you don’t feel like defying the water ponds with your Hunters on a rained out festival this summer, you can also choose to stay at home for some good old-fashioned cookie baking. And let’s give it an even more positive twist while we are at it. For those of you expecting some hot summer nights, let’s not bake, but freeze our cookies!
These frozen cookies happen to be a very healthy alternative to the classic butter, sugar and flower variety that puts your blood glucose level through the roof! It of course all depends on a different set of natural, but very delicious ingredients. The great thing about it is that there are so many healthy options. You can mix and match with all sorts of ingredients, but my favourite combination is:
- 1 (organic) banana
- ¼ cup of organic almond butter*
- 1 cup of fresh granola**
Stir all ingredients together and let the thick paste leek out on baking paper or foil until cute round shapes form. If you don’t get them properly round, it’s not a big deal. Remember home made = often ugly, but appears so much more scrumptious.
Put the cookies in the freezer for 90 minutes. You won’t have any hustle adjusting the oven and/or burning your fingers.
*You can use any nut butter.
**Preferably unsweetened granola, or one that is sweetened with agave syrup.
